Manufactured in Seki City, Japan, the traditional home of samurai sword smiths, these kitchen blades are made from stainless steel clad in high-carbon stainless steel for extra resistance to rust. By custom Japanese knives will have round handles but these have been made D-shaped to be ergonomic from dark Pakka wood. They are designed for right-handed cooks, but at least one lefty in a customer review said he was comfortable with the standard handle. It could pay to try out the feel of the knives in a kitchen supply store. Also the handles are made for relatively smaller hands so they can be a better match for women and some ethnic groups.

These kitchen knives have blades with an interesting look. This comes from the manufacturing process, where they have compressed 33 layers of steel. They are said to be Damascus steel, but without the rusting problems that Damascus steel has. Also the pattern the process creates on these blades helps to keep food from sticking. They are said to be okay to put in the dishwasher, but many users prefer to hand wash them as fine blades usually require. The Shun knife set includes a sharpening stick which the user can use to keep a nice edge on their blades, yet the knives are very sharp and can be sent to the factory once annually to be sharpened for the cost of shipping. Do not grind these knives in an electric knife sharpener.
